Cocktail time with No.29
The cocktail menu at No.29 Power Station West never disappoints, especially when you're relaxing on their riverside terrace with an Aperol Spritz in hand, choosing what to have next. We love the classics and the twists they make one them, one of our favourites was the Rhubarb Spritz from their Spring Menu.
Here, we're going to tell you how to recreate it...
First, you will need to make a rhubarb and cardamom puree by combining equal amounts of water, sugar, rhubarb and 7 cardamom pods. Pop this all in a pan, bring to the boil and then simmer until the rhubarb is soft.
Combine 50ml of gin (go classic if you like, or you opt for a fruity one for extra flavour!), 50ml of homemade rhubarb and cardamom puree, 25ml freshly squeezed lemon juice, a dash of soda and ice!
